..calamari !!...I know it's very easy to over cook though.... and the ink makes for a good food colouring.I really should eat more fish. I do LOVE smoked salmon and sushi though. hmmmmm !!..REX !!!...will you please stop talking about food ? *re-raids fridge*

I usually clean my calimari so that there is nothing left but a thin slab of meat, then dip in beaten eggs (I've gotten used to the screams from the eggs), then dip in finely crushed cracker crumbs, and fry in hot grease, until they start curling, then turn them over, cook another 30 seconds, then they are done. It takes far longer to clean them than to cook them. If they are cooked too long, they are tough like rubber. They are already chewy enough without that. But oh my God do they taste good! Especially with fresh steamed swiss chard with apple cider vinegar and a salad!

lol...Well, I do love salad and chard.....and I think I have been unfortunate in my experiences of calmari. It has always been overcooked. Still, I'm willing to buy some if you're willing to pop over and cook it !!
I imagine it would be quite nice steamed for a couple of minutes with salt and pepper and a few herbs !
