Eggnog

6 large eggs
2 egg yolks
1/2 cup sugar
1/4 tsp. salt
4 cups whole milk
1/2 cup brandy or dark rum (optional)
1 tsp. vanilla extract
1/2 tsp. grated nutmeg,


In a bowl, mix eggs, yolks, sugar, and salt. Stir in milk. Blend.

Stir in liquor (if you want liquor), vanilla, and top with grated nutmeg. Refrigerate until well chilled.

Whipped cream can be added if you wish.

Pineapple Lime drink

1/2 cup Sugar
3 cup Pineapple Juice
1/2 cup Lime Juice
1 qt Sparkling Water; Chilled

Mix all ingredients except sparling water; refrigerate until chilled.
Just before serving, stir in sparkling water. Serve over ice.
Garnish with lime slices, if you want.

Mix together:

8 ounces ice cold diet 7-Up
1/4 cup raspberry sorbet
1/4 cup fresh raspberries (or thawed frozen)
2 cups crushed ice

Blueberry Smoothie

1 pint fresh blueberries or 2 cups (10 ounces) frozen
blueberries, slightly thawed
1 cup pineapple, orange and strawberry juice blend or pineapple-orange juice
1 (8 ounce) container low-fat vanilla yogurt
2 teaspoons granulated sugar

In container of an electric blender, combine blueberries, juice, yogurt and sugar. Blend until smooth, about 1 minute. Serve immediately

Apple Banana Smoothie

1 frozen banana, peeled and chopped
1/2 cup orange juice
1 Gala apple, peeled, cored and chopped
1/4 cup milk

In a blender combine frozen banana, orange juice, apple and milk. Blend until smooth.

Easy Strawberry Lemonade

1 (12 ounce) can frozen lemonade concentrate, thawed
4 1/2 cups water
1 (10 ounce) package frozen strawberries, partially thawed

In a large pitcher, mix together lemonade concentrate and water. Stir in strawberries.

Hot Cocoa Mix

1 (25 ounce) box nonfat dry milk
1 (16 ounce) jar nondairy creamer
1 (15 to 16 ounce) container presweetened cocoa mix (like Nestle's Quik)
1 cup confectioners' sugar

Mix together all ingredients in a very large container. Use a wire whisk to be sure it is distributed evenly. Divide mixture into jars with tight lids.

To make hot cocoa, place 2 to 3 tablespoons of mix into a mug. Add boiling water and stir well. You may use more or less mix to taste or depending on the size of the mug.
